- Melt the butter, combine with the beer.
- Slowly whisk in the eggs, sugar, and finally the flour. Whisk slowly to ensure there are no lumps in the batter.
- Add the vanilla extract and whisk briefly.
- Heat a skillet, or griddle and coat with a thin layer of butter. For authentic crepes, spread the batter as thin as you can manage.
- Fill the crepes however you see fit. I like fruit (strawberries, blueberries, banana) drizzled with honey. Yum!
